Roasted Parmesan Garlic Acorn Squash

Cook time: 30 minutes
Total Time: 35 minutes

INGREDIENTS

  • 1 acorn squash, washed

  • 2 tbsp olive oil

  • 1/4 cup grated parmigiano reggiano

  • 1 tsp garlic powder

  • Salt and pepper to taste

INSTRUCTIONS

  1. Preheat oven to 400°F

  2. Cut the squash in half, using a spoon scrape out the insides, and slice into 1/2" half moons.

  3. Cut the slices in half and place them in a large bowl. Add the olive oil, parmigiano reggiano, garlic powder, salt and pepper. Toss to coat. 

  4. Lay the squash out on a baking sheet. Bake for 30 minutes until fork tender and the the cheese crust is slightly golden.
