Recipe: Oven Baked Salmon

Every year on Good Friday I was told "don't forget, you can't eat meat today" and as a good little girl I never questioned my parents I simply went along with it. To be honest, my mom was a phenomenal cook and everything she made was delicious so if I had to eat fish I'm glad she was the one that made it. Now older, with mature taste buds (may be the only mature thing about me) I look forward to eating fish.

That being said, today's Good Friday dinner is Oven Baked Salmon, on a bed of Brown Rice, Cauliflower White Bean Smash, and Pear Arugula Salad. Buon Appetito!

INGREDIENTS

  • 2 salmon fillets (each 6 oz/175g)

  • 2 teaspoons lime juice

  • 1 tablespoon seafood seasoning (I use Presidents Choice Seafood Seasoning Rub)  

INSTRUCTIONS

  1. Preheat oven to 450°F (230°C)

  2. Pour line juice over salmon and sprinkle seafood seasoning.  

  3. Place salmon on foil lined rimmed baking sheet.

  4. Bake in 450°F (230°C) oven for about 10 minutes or until fish flakes easily when tested with fork. Broil for an additional 2 to 3 minutes or until fish is golden.
