Recipe: One Pan Chicken Dinner

One Pan Chicken Dinner

INGREDIENTS

  • 8 bone-in skin-on chicken thighs

  • 1.5 lbs mini potatoes, halved

  • 5 carrots, peeled, halved and cut in 1-2 inch pieces

  • 4 Tbsp olive oil

SEASONING

  • 1 Tbsp kosher salt

  • 1 Tbsp Italian seasoning

  • 1 tsp ground black pepper

  • 1/2 tsp garlic powder

  • 1/2 tsp paprika


INSTRUCTIONS

  1. Preheat oven to 425°F

  2. Drizzle olive oil in a large trimmed baking dish and with a paper towel spread the oil to coat the dish.

  3. Wash and cut the potatoes in half and add them to the prepared baking dish. Add the peeled and cut carrots to the dish along with the potatoes.

  4. Pat the chicken thighs dry with a paper towel and add them to the along dish with the vegetables. Drizzle 4 tablespoons of olive oil overtop.

  5. In a small bowl add kosher salt, Italian seasoning, ground black pepper, garlic powder and paprika. Stir to combine and sprinkle overtop the chicken and vegetables. Using your hands or wooden spoon toss ingredients together to coat.

  6. Roast in preheated oven for 30-40 minutes. Check for doneness at 30 minutes - if the potatoes are soft and easily pierced with the fork they are ready and the internal temperature of the chicken is 165°F the meal is done.
