Almond Butter Currant Granola

I’ve become a granola making machine! You may want to double this recipe. It gets eaten that quickly.

Almond Butter Currant Granola
Ingredients
1 ½ cup Old Fashioned Oats
¼ cup chopped almonds
¼ cup unsweetened shredded coconut
2 tbsp Almond Butter
1 tblsp flax seed
1 tbsp coconut oil
3 tbsp honey
1 tsp vanilla
½ tsp sea salt
½ tsp cinnamon
¼ cup currants (or raisins or chocolate chips, you choose)

Directions
Preheat oven to 325 degrees.
Mix the oats, almonds, shredded coconut, flax seed, salt, cinnamon, and currents in a bowl.
In a microwave safe bowl add almond butter, coconut oil, and honey. Place in the microwave for 30 seconds or until melted. Remove from the microwave add vanilla and pour over dry ingredients.
Mix all ingredients until well combined. Scoop onto a parchment lined baking sheet and pack it down into a ½ inch thick layer. This will give you a chunkier granola, great for snacking.
Bake for 10-12, remove from oven and allow to cool before storing.
