Slow Cooker Turkey Chili

Slow Cooker Turkey Chili

Yields: 6-8 servings

1 ½ teaspoons olive oil
1 yellow onion, diced
2-3 garlic cloves, minced
2 pounds lean ground turkey
2 tablespoons tomato paste
1 can kidney beans, drained and rinsed
1 can black beans, drained and rinsed
1 can pinto beans, drained and rinsed
1 cup frozen sweet corn
2 red bell peons, diced
1 28-ounce can diced tomatoes
2 cups reduced sodium chicken broth
1 teaspoon cumin
1 teaspoon unsweetened cocoa powderDirections
1 ½ tablespoons child powder
½ teaspoon smoked paprika
½ teaspoon dried oregano
½ teaspoon ground cayenne pepper
¾ teaspoon sea salt
½ teaspoon ground black pepper
2 teaspoons reduced sodium soy sauce

Heat the oil in a large pan.
Add the diced onion and cook until tender, about 3-4 minutes and add the garlic and continue to cook until fragrant.
Add the turkey and cook until browned, stirring to break it up as it cooks.
Add the tomato paste and cook 3 minutes
Add all ingredients from the pan into the slow cooker. Then the red bell pepper, diced tomato, chicken broth, beans, corn, spices, and soy sauce and stir to combine.
Cover and cook on low for 7-8 hours
